After you have a decent amount of money, pause the game and you will see a full map of the city. The best way to make some quick money is to steal a car (press Y to hop in when near one) and run over pedestrians collecting coins as you kill them. If you are doing this in story mode though, you will need some money since it is $100 coins for one spades game.
